omlette recipes

    Well, you take some eggs, and then you take some other stuff, mess up the eggs real good, put the stuff in the middle and cook it. Yum.

      But seriously, how about mushrooms - button and or oyster mushrooms. Mushrooms and spinach. Mushrooms and tomato. Tomato and prosciutto (spelling?). Artichoke hearts and garlic.

    I like to use Eggland eggs, they are high in omega3.

      do you mix the eggs with water, milk or cream? or nothing? each way produces a different result... i like the extra purity of a little water, but the richness of cream is sometimes compelling...

        I use sour cream in my omlettes, and I whip them for a super long time. You should try it. I also usually mix in chives.

          ahh even better... i've used creme fraiche and mascarpone as well. you can't forget the most important ingredient --- CHEESE!!

            yeah i've heard creme fraiche is alot better than sour cream. but i don't know where to get that stuff. i'll have to try it if i can.

              creme fraiche is basically slightly less sour cream without the gelatin. most grocery stores in the bay area carry it, but in other parts of the country you might try a natural foods or international grocery store.
